Ingredients

  • 1 yellow onion
  • 2 medium zucchini
  • 1 bell pepper
  • 2 roma tomatoes
  • 1 bunch green onions (sliced), for garnish
  • 1 can red enchilada sauce
  • 1 TBSP taco seasoning

PREPARATION

  1. Heat a Skillet to medium high heat.
  2. Add oil, dried herbs, and seasonings; then lay vegetables flat and cook for 2 minutes.
  3. Flip and cook for another 2, lower heat to medium low, then remove vegetables and set aside.
  4. Add Enchilada Sauce and heat through.
  5. Stack vegetables in an alternating pattern into a tower.
  6. Spoon sauce onto the plate, garnish with green onions, and serve immediately.
